As soon as I heard the question, I stopped and thought about it. It's a good trivia question. Here are the answers I came up with, in chronological order:
Ratatouille is *NOT* disney, it was Pixar before dinsey bought them out. You can tell the difference because it had a mature plot that appealed to children and adults, complex characters, and most importantly, it was not the urine-soaked pile of garbage that everything with the "Disney" name has become.
they don't mean classic in the traditional sense, they have a team to produce their some higher quality movies under their "Classic" line of movies, similar to Nike's "Air" line of shoes. This team used to be headed by Walt himself before he died. If i remember correctly his last movie was the jungle book.

I suspect the newer ones don't count as "classic" yet. Besides, Ratatouille, et al. are really the blood and sweat of Pixar.
Show off! Those may be all Disney and all animated, but some of them are definitely not "classic". I'll let the group argue out which ones.
Ratatouille and Cars are both Pixar films though, and even though they're still under the Disney umbrella, I don't think they count!
